Free-range duck breast from Sladesdown Farm near Ashburton, Devon is cured in a brine flavoured with thyme, juniper berries, black papper, honey, maple syrup and port. It is then cold-smoked over beech wood before being sous-vide to keep the meat juicy and succulent.

Provenance - What began as a hobby for David and Karen Richards has led to them becoming one of Britain’s most innovative cured meat producers. The couple had been curing in their farmhouse kitchen for friends and family for several years, so with a full recipe book they started to scale things up. Today, Dorset-based Capreolus makes an array of stunning charcuterie using free-range meat, often from rare-breed animals, sourced from local farms with high welfare standards.

The duck is from a variety of British farms with a minimum welfare standard of ‘barn-reared’.

Our deliveries are packaged in a Harvey & Brockless cardboard box with protection and ice packs inside to keep your products safe and at the correct temperature when delivered.

The delivery will be made via DPD, please make sure you are available to accept your order once you receive your DPD dispatch email/text, please also ensure you provide the correct delivery information as DPD will use this to update you with tracking information for your order.

The majority of our products are perishable so we advise they should be chilled as soon as possible once delivered. We currently do not offer gift wrapping.
